Honey Rock Cakes - Elizabeth Fiddy

 
225g(8oz) Self Raising Flour
75g(3oz) Margarine
25g(1oz) Brown Sugar
1/2 teaspoon Ground Ginger
50g(2oz) Clear Honey
1 Egg plus a little Milk
50g(2oz) Sultanas or Currants

 

  1. Rub fat into flour, add other ingredients and bind with egg and milk mixture to make a stiff dough.
  2. Put in heaps onto a greased baking sheet.
  3. Bake in a hot oven 200C/400F/Gas Mark 6 for 20 minutes.
  4. Cool on a wire tray.
